My mom makes the best banana cake I have ever had, and sometimes it gets taken up a notch when she makes it with brown sugar frosting. Since I was a little kid my mom has made this. I started attempting to make it when I was a teenager, and even recently I have tried but it never turns out the same. There are just some things mom makes best. So when I had a serious pregnancy craving for some I messaged my mom asking if I could get her help making it so that it would actually turn out. Well, I didn’t hear back from my mom which is not normal. Instead when we visited a couple days later she had a whole cake ready to go for me. My mom really is the best. I was one happy pregnant lady. I had several people ask for this recipe, and my mom kindly shared.
- Banana Cake
- 1 c. white sugar
- 2 eggs
- 1/2 c. oil
- 1 3/4 c. flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 tsp. soda - dissolve in 1 Tbsp. sour milk (add a bit of vinegar to milk to sour it)
- 1 c. mashed banana
- 3 more Tbsp. milk
- 1 tsp. vanilla
- Brown Sugar Frosting
- 1/2 c. butter
- 1/2 c. brown sugar
- 1/4 c. milk
- 2 to 2 1/2 c. icing sugar (or enough for desired consistency)
- 1 tsp. vanilla
- For the Cake: Beat sugar, eggs and oil.
- Mix dry ingredients together.
- Mix banana, milk, vanilla and soda mixture together.
- Add dry ingredients and banana mixture alternately to the egg mixture until well mixed.
- Bake in a 9 x 9 pan at 350 degrees for 35 - 40 minutes or until cake springs back when touched.
- For the frosting: Melt butter in small saucepan. Add brown sugar and cook until sugar melts. Remove from heat and stir in milk.
- Cool. Beat in enough icing sugar to make a good spreading consistency. Add vanilla.
- Yield: Enough for an 8 or 9 inch square cake.
